I have an EPIC ceviche recipe that’s quick, easy, and healthy. Best of all it’s so mouth watering good, if you’re not careful you may finish the entire bowl before your guests arrive!
What I also love about this ceviche is that it tastes better the following day, so it makes for a great make ahead dish! I love packing this recipe for picnics at the Hollywood Bowl too!
- 2 lbs cooked shrimp
- 3/4 cup fresh lime juice
- 1/2 cup minced onion
- 1/2 cup finely chopped seeded tomato
- 1 cup avocado diced
- 1/4 cup cilantro
- 2 tbsp olive oil
- 2 tsp minced jalapeno
- 1/2 tsp salt
- 1/8 tsp cayenne
- 1/4 tsp cumin
Combine all the ingredients, gently stirring to mix. Refrigerate for one hour, and serve chilled in a tall martini glass with tortilla chips!
Note: You can chop the shrimp but for convenience I kept them whole with tail off.
