It’s been really difficult to sneak in veggies and other antioxidants in my 5 year old’s diet. That’s why I love these smoothie bowls made by registered dietitian Luisa Sabogal, RDN, MS, CDE. It’s filled with antioxidants, healthy fats and fiber from the pumpkin seeds, spinach, banana, coconut milk and oatmeal. You can read about the benefits of healthy fats here. The mango adds that layer of sweetness that makes it oh so tropical and kid approved.
The best part about these is you can make them a day ahead and serve them for breakfast the next day! They’re vegan friendly too!
2 cups frozen spinach
1 overripe frozen banana
1/2 cup chopped mango (frozen or fresh)
1/4 cup cooked old fashioned oatmeal
2 tbsp pumpkin seeds
1 cup unsweetened coconut milk
Squeeze of half lemon
1/2 tsp sprinkle of cinnamon
Blend all the ingredients except for the lemon and cinnamon.
Pour in two bowls and squeeze the lemon and sprinkle cinnamon and enjoy!
