Kid Friendly Turkey Vegetable Soup

Here’s a quick weeknight meal that’s healthy and kid friendly (despite the hidden veggies) and best of all it’s easy. All you need are a few ingredients (love the mirepoix mix from Trader Joe’s).

Kid Friendly Turkey Vegetable Soup

INGREDIENTS:

  • 3 tablespoon oil of choice (I prefer avocado oil)
  • 1 medium yellow onion finely diced
  • 1 large carrot peeled and cut into 1/4 inch pieces
  • 1 celery rib cut into 1/4 inch pieces
  • salt and pepper
  • 1 lb ground turkey
  • 3 garlic cloves minced
  • 4 cups low sodium chicken broth
  • 1 dried bay leaf
  • Parmesan cheese for drizzling

DIRECTIONS:

  1. In a large saucepan or Dutch oven, heat the oil over medium heat
  2. Add the onion carrot celery and season with 1/2 teaspoon of salt and 1/4 teaspoon of pepper
  3. Cook stirring frequently for 5 minutes until the vegetables soften
  4. Increase heat to high and add ground turkey and garlic
  5. Season with 1/2 teaspoon and 1/4 teaspoon of pepper
  6. Cook for 6 to 7 min until meat is browned and cooked through
  7. Add the broth and bay leaf
  8. Bring to a boil
  9. Reduce the heat so that the mixture simmers and cook until the liquid is reduced slightly, about 15 min
  10. Remove bay leaf and discard
  11. Ladle the soup into bowls and drizzle parmesan cheese to your liking and ENJOYKid Friendly Turkey Vegetable Soup
